Falafel are golden-brown, crispy discs on the outside and tender and flavorful on the inside. They are made from chickpeas, fava beans, or a combination of both, and flavored with fresh herbs such as parsley and coriander, along with garlic, onions, and Arabic spices such as dried coriander and cumin.
